Ham & Cream Cheese Scramble

I love going out for breakfast. I usually get something off the griddle like pancakes or French toast, but every so often all I want is a big batch of scrambled eggs and bacon. It’s mornings like those that made me think of this delicious treat that’s easy to make and perfect for Mom on her special day.

See, when I was a kid, I always woke up early to make mom breakfast in bed. When I was little it was cereal. When I was older and could use the stove it was pancakes or scrambled eggs. I always loved scrambled eggs and pancakes (not necessarily at the same time). But I remember the pancakes were always a little more involved than the eggs. There was batter and milk and vanilla and a lot of measuring. But scrambled eggs are so much easier. It’s just eggs and milk and a little salt and pepper whisked together. Like I said, easy.

While those are the basic ingredients, after that, you can get as complicated as you like. I always like to sauté some onions and throw those in. If I have cream cheese or chives I’ll throw those in as well. And if I have sausage, bacon or ham that goes in, too. I’ll never throw all those ingredients into the same batch of eggs of course, but it’s usually some combination of them.

I like to use cream cheese whenever I can because it adds a creamy texture that you just can’t get with milk alone, no matter how much fat is in it. Unlike milk, cream cheese is salty and rich and just makes the whole egg dish that much more decadent. And on Mother’s Day there’s no one more deserving of a decadent dish than Mom. Sure, you could go out for a big, lavish brunch, and spend a ton of money, but trust me, nothing beats a homemade meal.

I know this recipe sounds complicated, but it couldn’t be any easier. It’s just cream cheese, eggs, milk and a slice or two of ham all whisked together and dumped into a frying pan. It’s so easy in fact, that this can be whipped up and served to Mom in her bedroom in a matter of minutes.  She’ll love you for it, especially if you clean up the kitchen when you’re done.
