Peaches & Cream Cocktail

In case you haven’t noticed, I’m a huge peach fan. As soon as they appear at farmer’s markets and grocery stores, I buy them by the bushel. Like apples in the fall and citrus in the winter, when peaches are in season, there are so many varieties. You could easily have one (or ten) every week and never have the same kind twice. There are yellow peaches, white peaches, donut peaches and even Lady peaches. The ladies are far and away my favorites. They’re a yellow peach that is so sweet and tart and juicy, I can never get enough.

Unfortunately by September, the peaches start to fade. They get mealy and mushy and just aren’t the amazing fruit they are in the late spring and summer. So, how do I get through the dark winter months without my favorite fruit? Sure, I could enjoy the sicky sweet variety you see swimming in syrup in the grocery stores… But I prefer liquor. No, I’m not talking about peach schnapps (which definitely has its place in the cocktail world). I’m referring to Infuse Spirits Peach vodka.

Made with corn and real peaches, there’s no sicky sweet artificial flavor here. Instead what you get is a smooth liquor that has a wonderful peachy aroma and subtle peach undertones. It’s almost like a bourbon. Almost. While the peach flavor doesn’t blast you on the first sip, it definitely hits on the nose and finish, making it the perfect choice for a nice tall cocktail.

When Infuse sent me the bottle and I first sampled it, I immediately tasted vanilla and cinnamon. Combine that with the peach and I knew it would make a great tiki cocktail. I know, I know… rum is usually the prominent liquor of choice in a tiki drink. But these days plenty of other liquors are used in tiki drinks. After all what really makes a tiki drink a tiki drink? Is it the liquor? Is it the mixers? Maybe it’s just pouring the cocktail into a tall tiki glass or wearing something covered in flowers. Whatever it is, there’s no longer any hard and fast rule. So, I chose to make a tiki drink. While I did use rum in the mix, I also used a healthy dose of the peach vodka. To complement that peach flavor I whipped up some cinnamon simple syrup. The pink color comes from the blood orange juice and the cream from coconut milk. When shaken all together and poured over a mountain of crushed ice, you end up with a great tiki cocktail that’s perfect for Valentine’s Day while reminding you of warmer weather and those delicious peaches.
