Watermelon Mojito

Yes, it’s another mojito recipe! But do you blame me? It’s summer! When I think of summer, I think of days at the beach, lounging at the pool, backyard barbecues and plenty of fun! And nothing goes better with summertime fun than a rum cocktail.

Rum is one of of those liquors that just screams summer to me. I think it’s because when I think of rum, I think of tiki cocktails, and tiki cocktails are usually enjoyed on hot days in tropical locales. Of course that’s not the only place I imbibe tiki drinks, but it is my favorite. Now, I know the mojito isn’t necessarily considered tiki, but it’s made with rum, mint and bubbles… all ingredients commonly found in a great tiki drink.

The classic mojito is one of my favorite summer sippers because it’s so clean and fresh. It’s only four ingredients, but those four ingredients mean there’s plenty of room for adventure. Last week I added coconut water and blueberries. But I’ve also used strawberries, raspberries and blackberries for a berrilicious version. While the classic is made with lime juice, there’s no reason why you couldn’t use lemon instead, or make it even more summery by using sparkling lemonade. Like passionfruit? Use that! Want something a little more floral? Use a hibiscus or lavender syrup. Seriously, the options are endless.

With so many options, I knew a watermelon mojito would be another great addition to my mojito repertoire. I mean, is there any fruit more summery than watermelon? I don’t think so. Now, I know the watermelon margarita is a popular choice. But tequila has a very specific flavor which means that margarita is going to have a very specific flavor. But a clear, white rum (which is what’s usually used in a mojito) means that the watermelon and mint will really shine through. You’ll not only end up with a delicious summer tipple, this mojito is a great way to use up all that extra watermelon leftover from the 4th of July or last week’s beach party. (Don’t lie, you know you had one.) I love the way this drink tastes. It’s super sweet and tart, and that burst of mint makes it a really refreshing drink that’s guaranteed to get you through those hot summer days.
