Chocolate Peppermint Cookie Pie

It’s Cookie Season! Okay, I know it’s actually Christmas season, but this is the time of year when we’re all in our kitchens cooking up a storm and making tons and tons of cookies. There are cookies for holiday parties, cookies for swapping and then there’s of course that extra batch you made for yourself. Wait, you don’t do that? Well, you totally should. I mean, after making batches and batches of cookies you don’t want to be left without any, do you? I know I don’t. Anyway, with so many cookie options out there, I wanted to make sure you got a couple more on your list before the season was over.

This time of year I love all sorts of cookies. I love the simple sugar cookies that are covered with frosting. I love those melt-in-your-mouth Wedding Cookies and I cannot get enough of anything with chocolate. As a matter of fact, I always make a point of making at least one or two cookies that are in the chocolate family. I mean, it’s the holidays! Chocolate is everywhere! And because it goes with everything from peppermint to cinnamon, it’s the perfect choice for this time of year.

While I love single serving cookies, occasionally I like to make a big cookie pie. You’ve seen them… the cookie that’s made in a pie plate and then sliced like a huge pizza. I know these pies may not serve as many as your standard batch of cookies, but they look cool on a long dessert table and are a nice change of pace. I’ve made your basic chocolate chip, sugar cookies and now this delicious chocolate peppermint version!

Now, I admit while a lot of people are going nuts over pumpkin spiced everything, I steer clear. I hate pumpkin spice! Don’t get me wrong, I love cinnamon and all spice, but why do you need to add the pumpkin to it? Those spices are great on their own, especially the cinnamon. But while I hate pumpkin spice, a winter flavor I can never get enough of is chocolate and peppermint! I just love that combo. And whenever the holidays come around, I mix them as often as I can, like with this cookie pie.

I’ve mixed chocolate and peppermint before with great delight in single serving cookies, but I’ve never done it with a pie. Of course, there’s no reason why I couldn’t, I just never have. I’ve also never crushed candy canes over my cookies. That I have no excuse for. I mean, I love mint and those pretty pink striped candies look so good sprinkled over chocolates. It’s just plain stupid that I’ve never done it. But this cookie remedies all those things. Now, I finally have a chocolate mint cookie that perfectly fits into the holiday theme… and the fact that it looks really good on a dessert table is a wonderful bonus.
